Have you tried Outlook Web Access method ? (OWA)
Although this too might need to be enabled on server.

But if you can access your Exchange server from browser (IE) then probably
it is enabled.
I had tried OWA with Evolution a while back. (may be an year ago)

Configuring IMAP should be fairly straight forward
