Beware managing an email server is not for the faint of heart.
Especially when it will be visible on the Internet.

Will this server be in an Intranet or visible on the Internet?   What
is the user base size?

In Linux there are a lot of options and people will advice depending
on their comfort level with the respective packages they have worked
on.

Most distros provide postfix + dovecot + roundcube (web interface).
IMO, the combination provides a robust platform.
