Aside from SFLC there is the IFF (https://internetfreedom.in/) which
engages in the topic of digital rights, internet and privacy. My
suggestion would be to participate in some of the talks organized by
Hasgeek in order to get familiar with the individuals and
organizations doing work at the intersection of law, technology,
rights and equity. And then figuring out the specific aspect which
gets her motivated to bring her expertise to bear.

The approach taken in Canada is not exactly a lift-and-shift of CCPA
(if by which you mean the California Consumer Privacy Act). For what
it is worth there is also a strong adoption of digital verifiable
credentials see DIACC (https://diacc.ca/) and PCTF
(https://canada-ca.github.io/PCTF-CCP/)
